CREOLE OKRA GUMBO

2 cups fresh or frozen okra, cut into bite-sized pieces
1 15oz can organic stewed tomatoes
2 cups whole kernel corn, fresh or frozen
1 medium yellow onion, diced
4 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons soy flour
1 cup water
Cajun/Creole Seasoning to taste**

In a medium dutch oven, combine oil and soy flour over medium high heat, stirring constantly until mixture thickens and is a caramel color. Add onions and garlic, continuing to stir mixture, approximately 5 minutes. Add remaining ingredients, reduce heat and simmer for 10 minutes or until okra is tender, but not slimy.

Add a few dashes of Tabasco for extra heat. Serve over rice.
